Then on weekends, brekkie can drift into brunch to be enjoyed with family or friends, just kicking back together and simply enjoying life.
It’s pretty much impossible not to enjoy life in Byron, particularly at this time of year when the crowds have thinned out, the days are balmy, the beaches demand leisurely walks along them and there’s the added bonus of witnessing the annual migration of Humpback whales northward to warmer waters.
At The Bower, the pool is heated to a temperature that’s still refreshing but comfortable, and before your morning swim, you can duck next door to The Byron General Store for a bite of brekkie. One of our fave day-starters is their Peanut Butter Cacao smoothie which is a blend of crunchy Byron Bay peanut butter and banana, blended with almond milk and Bare Blends Organic cacao. Our Bower people shared their own particular go-tos….
TALIAH (co-owner and creative) - The scramble special from Bayleaf Cafe has been my fave for years and still is. It’s scrambled eggs with dill and chilli-marinated feta served over sourdough and topped with salsa verde, dressed greens and avocado.
DANELLE (property manager) - The Byron General Store, right next door to The Bower (as in a 30 second walk!), is hard to beat for brekkie. And my No. 1 choice? The Magic Mushie which is roasted portobello mushroom, organic spinach, vegan aioli and smokey, house-made relish on an organic rustic roll. But as much as it’s a vegan dish, I add bacon - because everything tastes better with bacon in my book!
Bayleaf – Brekkie Greens. A dressed mix of chopped raw broccoli, shredded kale, avocado, fresh chilli, buckwheat grains, fresh herbs and pistachio nuts served with two poached eggs.
The Byron General Store – Super Greens. Banana, mango and baby spinach blended with local Bare Blends organic greens and coconut water. Nutritious and delicious.
GEORGIA (marketing and content creator) - For a quick, easy and tasty choice, the Acai Bowl or Granola Bowl from TopShop is my go-to – yummy and fresh every time, and the perfect pit stop after a morning beach walk.

KATIE ELLIOT (Wild Goat Events) - a healthy smoothie from Bare Blends, or of course her famous Toast the Sun breakfast experience watching the sunrise over the most Easterly point of Australia eating brekky prepared by Katie herself with local produce. Things like buttermilk or chocolate waffles, toasted granola and fruit, and breakfast tortillas.... Yum!
