WE'RE PRETTY  SELECTIVE AT THE BOWER. IT'S AN ETHOS SHARED BY ADAM MILLER FROM COVERT WINE CO WHOSE MANTRA IS BEING BOLD ENOUGH TO STRAY FROM THE MAINSTREAM, BUT ALWAYS WITH THE CUSTOMER EXPERIENCE AT THE FOREFRONT OF EVERY DECISION.

He looks to unearth cracking wines from smaller, boutique and artisanal producers that are not necessarily on everyone's lips and that offer great value for money.  He prefers to go direct to the producer, winery or importer and then provide his hand-picked, personally tasted wines direct to his customers, cutting out the middle man.  And just how much do we all love to get that kind of sneaky deal!
 
Adam is called The Chief Wine Spy at Covert and he comes with some pretty serious credentials as a qualified sommelier with more than 15 years experience in some of the country's finest restaurants. We asked Adam to curate a wintery wine list from Covert's offering for our Bower readers - special drops of red, white and rose to have cosied up by the fire with a Netflix binge, over a special dinner for two or a celebration with family or friends at your place or ours.

We can’t get enough of this lovely aromatic Adelaide Pinot Gris. The palate is delicate yet ripe with honey spiced pear and white nectarine balanced with crisp acidity. Awesome with Asian food.

One of our favourites right now is a beautifully pure, biodynamic Austrian Grüner Veltliner. If you like Pinot Gris/Grigio and/or Aussie Riesling, it's definitely worth a try.

Campo Flores Tinto Organic Tempranillo Syrah 2017

Very drinkable and smooth we are loving this organic Tempranillo. This intense, succulent and juicy drop hails from Castilla-La Mancha in central Spain. Ripe strawberry and blackcurrant fruit provide the character while a warming spicy finish gives personality to this delicious Spanish red. The perfect wintery mid-weeker.

Pour Les Amours Rosé 2017

A creation by former Tsubi designer Dan Single, the Pour Les Amours Rosé is bloody gorgeous. On the nose, there are delicate notes of raspberries, peaches and white flowers. A staple for us here at Covert year round.

A winter warmer for us here at Covert! This stunning Argentinian Malbec that is just screaming out for a cool winters night sitting by the fire. It’s rich, plump and round with bucket loads of warming red and dark fruits that just seem to go on and on. One of the finest Mendoza Malbec’s we have tried in a while.

Sons of Eden Kennedy Barossa Valley GSM 2017

This delicious Barossa Valley Grenache/Shiraz/Mataro (GSM) is bursting with ripe cherry, plum, sweet spice and red liquorice aromas. The palate is a complex blend of red and dark fruit flavours supported by a rounded and fleshy mid palate, finishing with excellent length and freshness. Covert clients are buying this in bulk at the moment- a real hot favourite this winter by a mile!
