Byron Bay is known for many things – beautiful beaches, lush rainforests, laidback locals, sustainable lifestyles and celebrity sightings (no trip to Byron is complete without one).

But in the last few years, craft distilleries and boutique breweries have been popping up like mushrooms and we’re not one bit sad about it.

From cult craft beers to colour-changing gin, Byron’s surrounds have become the Shangri-La of boutique boozing.

Husk Distillers

This little gem is Australia’s first paddock-to-bottle rum distillery and home of the much-loved, Ink Gin - the same delicious number you’ll find in The Bower’s mini bar!

Located in the regional town of Tumbulgum, this single-estate distillery boasts views across the Valley to Wollumbin Mt Warning and houses a Cellar Door, Cocktail Bar and Planters Café. Book a tour to learn about the distilling process and discover the magic behind Ink Gin’s colour transformation from blue to pink. Tours include a G&T on arrival with an exclusive behind-the-scenes walk through and rum tasting in the barrel house. For those who prefer to move at their own pace, grab a cocktail or a tasting paddle from the bar and head out to the sprawling lawn for a leisurely picnic in the sun. Heaven!

Cape Byron Distillery

Perched in a sub-tropical rainforest in the hinterland of Byron Bay sits Cape Byron Distillery, home of Brookie’s Gin. This highly awarded distillery provides guided tours of both the rainforest and distillery with gin tastings and cocktails served at the bar and balcony which overlooks the property.

Recently awarded as the 2020 ‘Sustainable Distillery of the Year,’ you’ll hear all about the Brook Family’s passionate regeneration efforts which have seen the property turn from red dusty landscape into a lush green oasis. Many of the native botanicals used in their gin are quite literally picked from their backyard - this is craft distilling at its finest.

The gin itself has a deliciously unique flavour profile reflective of the rainforest surrounds, and the rotating roster of cocktails never disappoint.

Lord Byron Distillery

In the spirit of Byron Bay, sustainability comes first at this artisanal producer. Using all natural and locally sourced ingredients Lord Byron’s spirits are handcrafted, zero waste, carbon neutral and downright delicious!

Tours here are complimentary when you purchase a tasting flight. But if you’re looking for something a little more hands-on, why not test your talents at gin blending? They offer a two-hour masterclass where you’ll select your favourite botanicals, steep them in alcohol before distilling in a micro-still.

Stone & Wood

With craft beer progressing from a Broadsheet buzzword to full-blown movement, a visit to Stone & Wood Brewery is essential stop for both beer nerds and beer noobs alike.

A short drive from The Bower, in Byron’s Arts & Industrial estate, our only advice is to come thirsty! They have a number of pilot batches rotating weekly, along with their five tried and tested main stay brews. Soak it all up with bar snacks and classics served from the onsite Canteen.  

You’ll find it easy to lose an afternoon here as the venue itself is stunning. Bathed in an abundance of natural light with exposed beams, blonde timber and clusters of native greenery, while its main purpose is an operational brewery and office space for the Stone & Wood team the venue has been purposefully designed with customers in mind.
